Linguine Alfredo with meatballs and homemade Alfredo sauce!

This was super fun for me to make. I know we all love spaghetti and meatballs, but I thought to myself, would not linguine and meatballs be equally delicious and would not making Alfredo sauce be a nice switch-up from traditional tomato based marinara sauce? Well, I was right! It was absolutely delicious! 

Ingredients:  

1 pound linguine
1 pound ground pork, beef, or turkey (I used pork this time) 
2 cups wild portobello mushrooms coarsely chopped 
1 yellow onion, finely chopped 
1 garlic clove, finely chopped 
Ground sea salt and pepper 
1 stick of butter or margarine (I used margarine)
1 teaspoon garlic powder 
6 oz Parmesan cheese
8 oz cream cheese
2 cups milk 
chopped parsley (for garnish)
1 bunch of fresh asparagus (side dish)


Boil water for linguine. Brown meatballs in a pan until all sides have been seared. Pop them in the oven on 375 for about 15-20 minutes. While meatballs are cooking, make the sauce and drop the noodles in the boiling water. Cook noodles for about 10-12 minutes, then drain. Clean the asparagus and chop the ends. Set aside. Sauté mushrooms, onions, and garlic until the onions are sweated out. Set aside. Melt one stick of butter and add cream cheese and garlic powder on medium heat.  Stir until smooth. Add milk gradually until thick then add the Parmesan cheese gradually until thick. Take the meatballs out of the oven and add sautéed veggies and meatballs to sauce. Simmer for about 15 minutes stirring occasionally so sauce can thicken. Chop fresh parsley. Heat a shallow pan on medium heat. Add a tablespoon of olive oil to the pan. Add the asparagus and cook for about 5-7 minutes. Last but not least, plate the food. Simple! 




It's been forever!

Sorry for being ghost! So many changes have occurred in my life in the last two years. Mostly good! I started a new job (working mom alert), we moved into our new home, I'm working on my music more (check me out www.youtube.com/akapella9)
and I lost 40 pounds! I still love food and still eat quite a bit (lifestyle change can oftentimes be a struggle lol) but I try to make healthier choices. I am human and still indulge from time to time. Anyway, it's good to be back! New food pics coming soon!

Chicken and veggies stuffed cabbage roll ups

Ingredients:

1 head of cabbage
4 boneless, skinless chicken breast
2 carrots, peeled and finely chopped
1 medium onion
4 garlic cloves, minced
salt and pepper to taste
ground ginger to taste
soy sauce to taste

Start by boiling the whole head of cabbage in some salted boiling water. Boil until leaves are soft then remove from heat. Season the chicken with salt and pepper then cook in a pan with some vegetable oil. Once the chicken is cooked throughout, saute the onions, garlice, and carrots. Once the onions have softened, add the ground ginger (about a 1/4 of a teaspoon, or less if you don't care for ginger much). Add chicken, then add the soy sauce. Saute all together. Once the cabbage leaves are cooled, take a leaf off and place the chicken mixture in the mixture and roll as you would a burrito or egg roll. Use toothpicks to keep in place or roll very tight. Bake in oven for about 20-25 on 350. Here are some pictures of how to roll the roll ups and then the finished product sprinkled with soy sauce. Enjoy! :)
